How old were you when you started in hospo?

Seven

Where and what doing (role)?

I was at my Mum and Dads pub, doing the de-bottling + bottling up at the weekend. I can still recall the smell of the bottom of the bottle bin - grosssss!

What do you love about hospitality?

There is something so magical about a great dining experience and I love being part of that magic. The adrenaline rush of a busy service . That working in this industry has enabled me to work all over the world and get to know so many people from different walks of life. That there are new challenges everyday, you never stop learning or being surprised!  Oh yeah and there's wine, lots of wine!

What do you DISLIKE about it?

90 hour weeks

One of your fav moments:

Realising, after fighting against it and trying out many other industries, that restaurants are where I am supposed to be. And sitting down with the team, enjoying cold beers after a busy service.

One of your worst moments:

Dropping a chocolate brownie sundae on a bride.

What have you enjoyed about being in Lockdown?

Having time to do all the things I never have time to do. My housemate jokes I’m the only person still doing a 60 hour week in lockdown.

What’s been the biggest challenge?

Trying not to eat 10 times a day or start drinking before 11am. Not feeling gutted about having to cancel a trip back home to meet my new nephew.  Missing other humans.

What’s something you can’t wait to try or do, or are most looking forward to, when things get back to L1-2?

HUGS — and Tinder haha.

What are you drinking right now?

Ekleipsis Pinot Nouveau

If you could eat anything for dinner tonight, from restaurant in the world what would it be?

Sun-dried, grilled octopus from a seaside restaurant in Denia, Spain.
