Our brilliant, super-palate, wok-fighting, Energizer Bunny and Head Chef ‘G’ exchanged a quick-fire Q+A with Em recently, while passing the time in Lockdown: 

How old were you when you started in hospo?
14 years old. At Nandos — all round guy but didn’t stay for too long.

What do you love about hospitality?
The adrenaline and seeing our lovely customers happy with the food we serve.

Not so much…
FOMO for the things I miss out on due to the hours.

One of your fav moments:
Seeing my celebrity crush come into the restaurant. Cristina Milan ! 
(We can confirm, he lost his mind a little that day).

What have you enjoyed about being in Lockdown?
Spending time with my wife and having time to do stuff around the house. 

What’s been the biggest challenge?
Ankle injury is preventing me from getting my F45 fix.

What’s something you can’t wait to try or do, or are most looking forward to, when things get back to L1-2?
Visiting my family and friends.

What are you drinking right now?
Green tea with lemon and ginger.

If you could eat anything for dinner tonight, from restaurant in the world what would it be?
Ramen! From Mendokoro Ramenba — Philippines or Gumshara Ramen in Sydney.
